Are you serving Black Eyed Peas today for good luck? You’d better!

Hopping John

  • 4 Strips of bacon
  • 1/4 cup of chopped onion
  • 2 cups of black eyed peas, fresh or frozen
  • 1/2 cup of uncooked rice
  • 2 cups of boiling water
  • salt and pepper

Dice the bacon and fry with the chopped onion. Add to the peas, rice and water. Cover and cook over low heat until the rice and peas are tender. Add seasoning.

Serves 6-8
